This turkey curry is quick, simple and packed full of flavour! It takes just 25 minutes to cook and you might just find yourself cooking it right through to the new year. It might not be a traditional meal for the festive period but is a great way to mix things up between Christmas and New Year. It's also pretty healthy and can be made healthier with the addition of spinach or swapping white rice for brown rice.
Ingredients:
- 1 tbsp olive oil
- 1 medium onion
- 1 red pepper
- 1 green pepper
- 1 tsp chilli flakes
- 3 cloves of garlic, grated
- 3cm ginger, grated
- 3 tsp garam masala
- 2 tsp turmeric
- 500g leftover turkey
- 350ml passata
- 200ml coconut milk
- Salt and pepper to taste
Method:
- Place the oil, onions and peppers in a wide, deep pan and cook over a gentle heat (lid on) for about 5 minutes, or until softened but not brown.
- Add the chilli, garlic, ginger, garam masala and turmeric and fry gently for 2 more minutes (add a very small splash of water from the kettle if it gets to dry)
- Add the turkey, passata, coconut milk, salt and pepper and bring to the boil. Turn down low and simmer for 10 minutes until the sauce has thickened slightly and the turkey is piping hot all the way through.
- Serve with rice and/or a delicious Previns naan and all your favourite accompaniments
